Potato Fried

This recipe is something I cooked up on my own. It came out pretty well, so I added it to my repertoire, and decided to put down the instructions.


Ingredients

  • 3-4 medium sized potatoes

  • 1 large onion

  • 4-5 green chillies (depending on how spicy you want it)

  • 1 teaspoon Kashmiri red chilly powder

  • 1/2 teaspoon Aam chur

  • 1 tablespoon dried Kasuri Methi

  • Handful of chopped coriander

Process

  1. Cut the potatoes into small cubes.

  2. Slice the onions into thin slices.

  3. Cut the chillies lengthwise.

  4. Heat three tablespoons of oil.

  5. Crackle a teaspoon of mustard and cumin seeds.

  6. Add the potatoes and let them fry lightly.

  7. Add the Kashmiri chilly powder and stir for about 3-4 minutes.

  8. Add the onions and chilly. Stir for 5 minutes.

  9. Add the aam chur and kasuri methi. Continue stirring.

  10. Add a cup of water, cover and cook until dry.

  11. Add the coriander leaves. Stir.
